Bland means lacking strong flavor, interest, or character. When food is bland, it tastes flat and boring, like unsalted mashed potatoes or plain oatmeal without any toppings. The flavor isn't bad exactly, it's just... not much of anything.
The word extends beyond food to describe anything that fails to make an impression. A bland room might have beige walls, beige carpet, and no decorations, with nothing to catch your eye or make you feel anything. A bland movie leaves you feeling like it was forgettable, with characters who don't stick in your mind and a plot that doesn't excite you. When someone's personality is described as bland, it means they seem to have no strong opinions, interests, or memorable qualities.
Sometimes bland is exactly what you want: when you're sick, bland foods like crackers and rice are easier on your stomach. But usually, bland is something to avoid. We season our food, decorate our rooms, and develop our interests because we want life to have flavor and personality, not be a series of forgettable, flavorless experiences.
