The most important, basic part of something.
Essence is the quality that makes something what it truly is, the core nature that can't be removed without changing the thing completely.
Think about chocolate chip cookies. You could change the recipe in small ways: add walnuts, use brown sugar instead of white, make them bigger or smaller. But if you remove the chocolate chips, are they still chocolate chip cookies? The chocolate chips are part of the essence of a chocolate chip cookie.
In discussions and writing, people use essence to identify what matters most. A teacher might say, “The essence of this math problem is understanding fractions,” meaning that's the central skill you need. When someone captures the essence of a character in a drawing, they've shown the most important qualities that make that character recognizable and unique.
The word also appears in the phrase “in essence,” which means “basically” or “fundamentally.” If your friend gives a long explanation of why they're late, you might say, “So, in essence, you overslept.”
Essence can also refer to a concentrated form of something, like vanilla essence used in baking. Just a few drops contain the powerful flavor of many vanilla beans, the pure, concentrated essence of vanilla.
