Headcount is the total number of people in a group, organization, or at an event. When a teacher takes headcount on a field trip, she's counting students to make sure everyone's accounted for. When a company reports its headcount, it's stating how many employees work there.
The word treats people as countable units, which makes sense when you need practical numbers for planning. A summer camp with a headcount of 150 needs to know exactly how many lunches to prepare and how many counselors to hire. A business with a headcount of 25 operates very differently from one with 2,500 employees.
You'll often hear headcount used in situations where numbers matter for resources or safety. A restaurant has a maximum headcount for fire safety. A school district tracks student headcount to determine how many teachers to employ. Even though it sounds a bit mechanical (after all, people are more than just heads to count!), headcount serves an important practical purpose: helping organizations plan, budget, and care for everyone involved.
