If you planned to play video games but decide to read a book instead, you're replacing one activity with another. If your family was going to order pizza but gets tacos instead, the tacos take the place of the pizza. The word shows substitution: something new stepping into the spot where something else would have been.
You'll often see instead used when plans change or when someone makes a different choice than expected. “I thought she'd be angry, but instead she laughed.” “We could complain about the rain, or we could grab our umbrellas and go exploring instead.”
