An interviewee is a person who is being interviewed, meaning they're the one answering questions rather than asking them. During a job interview, the person hoping to get hired is the interviewee, while the person from the company asking questions is the interviewer. When a reporter interviews a scientist about a new discovery, the scientist is the interviewee.
The word helps us keep track of who's who in an interview. If your school newspaper wants to write about the principal's new policy, the principal becomes the interviewee and the student reporter becomes the interviewer.
