The roof of your mouth that helps you taste food.
Palate refers to the roof of your mouth, the curved surface you can feel with your tongue between your teeth and throat. The front part is hard and bony (called the hard palate), while the back part is softer and more flexible (the soft palate). When you eat, your tongue presses food against your palate to help you chew and taste.
The word also describes someone's sense of taste or appreciation for flavors. A person with a refined palate can detect subtle differences between foods, like distinguishing between types of chocolate or noticing a hint of cinnamon in a cookie. Chefs develop their palates through years of tasting and comparing ingredients.
People sometimes confuse palate with two similar-sounding words: palette (the board painters use for mixing colors) and pallet (a wooden platform for moving cargo). When discussing food and taste, you want palate.
When something appeals to different palates, it means different people with different taste preferences will enjoy it. A restaurant might offer dishes that satisfy both adventurous palates and those who prefer simple, familiar flavors.
