A pimiento (also spelled pimento) is a large, heart-shaped red pepper with a sweet, mild flavor. If you've ever seen a green olive with a little red strip stuffed inside, that red part is usually pimiento.
Pimientos are harvested when fully ripe and red, then often roasted to bring out their sweetness. They're much gentler than spicy peppers like jalapeños: pimientos add color and a pleasant taste without any heat. You might find them chopped up in pimiento cheese spread, a creamy Southern favorite, or diced into dishes for a pop of red color.
The word comes from Spanish, where it means “pepper.” In some grocery stores, you'll see small jars labeled “pimientos” or “pimentos” near the pickles and olives. These roasted red peppers have been peeled and preserved in water or oil, ready to add to sandwiches, salads, or recipes that need a touch of sweetness and color.
