Uninhabitable means impossible or too dangerous to live in. When a place is uninhabitable, people cannot safely make it their home, at least not without major changes.
A house damaged by fire or flood might become uninhabitable because the structure is unsafe or there's no clean water or electricity. After a major hurricane, entire neighborhoods can become temporarily uninhabitable until repairs are made and basic services are restored.
Some places are naturally uninhabitable: the surface of Venus is uninhabitable because of extreme heat and toxic air, while Antarctica was uninhabitable for humans until modern technology made research stations possible. Even then, people can only stay for limited periods.
When scientists search for life on other planets, they look for habitable zones where conditions could support life. A habitable planet needs the right temperature, atmosphere, and water. Without these, it remains uninhabitable.
